If I flip, will I be stuck underwater in my kayak?

The answer is no. In fact, you have to hold yourself in the boat using your knees and legs when the boat is upside down. If the sprayskirt (which is meant to keep the inside of the kayak dry) is very tight, it could be hard to get out of the kayak if the paddler forgets to detach it.
